Pineapple Upside-Down Cake

I have been meaning to write this specific post since a long long time. Got tied up in the planning and preparation of a family holiday that sprang up out of nowhere (we are quite a spontaneous bunch!!!). Anyway, somehow this post got pushed to the back burner and its only now that I am finally finding the time to put it up on the blog.



I bought a pineapple (it's a fruit I rarely ever buy) while in the market intending to eat it in a fruit salad...by the time I reached home I had already decided to make something a little more exotic with it and the first thing that came to my mind was the upside down cake, mainly because I had never tried it before...and what better time for something new than NOW !

Pineapple Upside Down Cake

1 tbs unsalted butter 
2 tbs cup sugar
5-6 slices of pineapple

1 1/3 cup flour
1 cup sugar
2 tsp baking powder
1/2 tsp salt
1/3 cup butter
1 cup milk
1 tsp vanilla extract
1 egg




Preheat oven to 200 degree Celsius.

In a pan heat 2 tbs of sugar. Once the sugar begins to caramalise, glaze the pineapple slices till are a little soft & sticky and coated with the caramel.

Arrange the pineapple slices in a cake tin which has been lined with butter.

Sift together the flour, baking powder and salt. Into this, mix in the sugar.

In a mixing bowl mix together the butter, milk and vanilla. Beat an egg and add it to the liquid ingredients.

Add the liquid ingredients into the dry mixture and beat well. Pour over the  pineapple slices in the cake tin. 

Bake in the oven for 45-50 minutes till a toothpick inserted in the center of the cake comes out clean.





Immediately turn the pan into a serving dish and serve warm.
