Tangy Roasted Green Peas - A Healthy Anytime Snack
The first post in the new year and like every one else I have made a commitment to eating healthier and cleaner all most of the days in 2018. This means lots more healthier recipes will be coming up on the blog with a special focus on quick eats.
With the busy schedules most of us follow on a daily basis, finding time to cook elaborate meals becomes relegated to the weekends - and let's be honest, weekends are for relaxation and recharging. Also, don't forget the cheat days! Not much time to plan and prepare meals if you ask me!
I will be sharing some really quick recipes with all of you, which can be planned ahead or made on the go, like this easy-peasy (ha! - pun intended!) recipe for a tangy snack that is great as breakfast as well as a quick snack.

Ingredients
2 cups green peas
1 onion small
4-5 cloves of garlic - crushed
2 green chilies
1 tsp ginger finely chopped
Juice of 1 lemon
1 tomato finely chopped
1 tbs coriander seeds roasted
1 tbs cumin seeds roasted
1 tsp sugar
2 tsp vegetable oil
Salt
Water
Lemon wedges to serve
How to
Grind the coriander seeds, cumin seeds and sugar along with a pinch of salt and keep aside.
In a pan, heat the oil and add the ginger, garlic and onion. Saute till golden brown and aromatic.
Add the green peas, chilies, salt and half of the coriander mixture and saute for 2 minutes.
Add a splash of water and lemon juice and cover with the pan with a lid. Let the peas cook on medium flame for 5-7 minutes, till cooked through.
Take off the heat.
Serve with a dash of the coriander mixture, tomatoes and a wedge of lemon.
