Sprout Khichdi: A Quick & Healthy Meal
Winter evenings are the best season to stay tucked in home and eat hot food while watching Television!!! Yes - lazy as it may seem, this is my perfect definition of a weekend spent well in the cozy comfort of my home.
Most of the times I am too cold to venture into the kitchen and cook something. On these occasions we usually order in. But sometimes with a bit of pre-planning, I have a totally delicious homemade meal! The caveat here is that these meals should not entail me having to spend hours in the kitchen.
I love khichdi any day - more so on these said days, where homemade seems the best idea - tasty, light and delicious. I added a twist to the recipe by using sprouted moth beans instead of the good-old lentils to add to the health quotient while still staying true to the spirit of khichdi!

It's a great way to incorporate sprouts into everyday meals.
Ingredients
1 cup moth beans sprouts
1 cup soaked rice
1 tsp cumin
1 tsp ginger finely chopped
1 green chillies chopped
1/2 tsp turmeric powder
1/2 tsp red pepper powder
Salt to taste
Water
1 tsp vegetable oil / ghee
How to
In a pressure cooker, heat the vegetable oil. Add cumin and saute till it begins to splutter.
Add in the ginger, green chilli, rice and sprouts.
Add the spices, salt and saute for a few minutes.
Next add water till it is a cm above the mixture.
Close the lid and cook till for two whistles.
Serve with a dollop of ghee, coriander, salad, curd and the works...
