Lemon Crinkle Cookies
What's the one thing that can light up my day in the middle of winter?
A bite of summer!
Nothing spells summer like the sweet smell of fresh lemons - the inspiration behind these cookies.
Bake a batch as a gift for a loved one or better still, for yourself!
Ingredients
1/2 cup Softened butter
1 cup Granulated Sugar
1 1/2 Flour
1/2 tsp Vanilla Extract
1 Egg
1 tbsp Lemon Zest
2 tbsp Lemon Juice
1/4 tsp Salt
1/4 tsp Baking Soda
1/4 tsp Baking Powder
1/2 cup Icing Sugar
How to
Preheat oven to 175 degree
Celsius.
Lightly coat the baking sheets with
non-stick cooking spray and set aside.
Cream butter and sugar
together until light and fluffy.
Mix in vanilla extract, egg, lemon zest, and
juice.
Stir in all dry
ingredients until just combined, excluding the powdered sugar.
Refrigerate dough for one hour.
Pour powdered sugar onto
a large plate. Roll a heaping teaspoon of refrigerated dough into a ball and roll
in powdered sugar. Place on baking sheet and repeat with remaining dough.
Bake for 9-11 minutes or
until cookies are cracked on top.
Cool cookies for about 3 minutes before
transferring to cooling rack.
I made an additional batch with a filling of orange marmalade. Equally gorgeous!
