Berry Cupcakes with a Chocolate Surprise
Bought a new microwave - YAY !!!!!

Day dreamt of what I will be cooking in the evening all day and after much list making I zeroed in on making these.
Try them - they make pretty dainty cup-cakes for sure ...
Ingredients:
50 gm unsalted butter at room temperature
1/4 cup vegetable oil
1/2 cup sugar
1 tsp vanilla extract
2 eggs
1/4 cup mixed berry crush
1 cup plain flour
1 cup whole wheat flour
1/2 tsp salt
2 tsp baking powder
3/4 cup + 3 tbs milk
12 1/2" cubes of dark chocolate
How to:
Sift the plain flour, wheat flour , baking powder and salt together, a couple of times and keep aside.
In a mixing bowl, add the butter, oil and sugar and whisk together until light and fluffy. You can use an electric beater to make things easier. I used a hand whisk and the cupcakes turned out just fine.4
Next add the eggs one at a time followed by the vanilla extract and continue to whisk till the mixture turns a pale yellow in colour
At this stage mix in the berry crush (a natural berry preserve will also suffice)
Now using a wooden spatula fold in gently the flour mixture and milk alternating between the two - a table spoon at a time
Scoop the mixture into a muffin tin lined with cup cake paper liners.
Fill the moulds till half full.
Plop in the chocolate pieces in the center of the moulds and push in using your finger till it is submerged in the batter.
Tap the mould gently to get an even surface on top
Bake in a preheated oven at 170 degree Celsius for 18-20 mins.
Cool on a wire rack before digging in :)
