Pizza Toasties
Winters are the time to tuck into a warm blanket, watch television, have a hot cup of tea and something delicious to snack on. Ideal winter evenings are the ones where I come back home and while away my time in front of the television (every one is entitled to being a lazy sloth once in a while) and a quick snack, which most often than not, lingers into and finally replaces the dinner. Talk winters and somehow quick, colourful and spicy sounds good - oozing cheese - that's perfect !
Yesterday, I was down with cold - which is showing no signs of subsiding even today. Anyway, I felt like having a pizza in the evening - was almost about to place an order for home delivery. Then I thought of saving up on the calories. I get such a pang of guilt after serious binging - something which is best avoided if possible.
So I planned to make pizza toasties instead - tastes like a pizza, loaded with veggies, less cheesy and therefore guilt free - which is perfect as it does not jeopardize with my conscience.
Also pretty quick to make. Fifteen minutes in all - earlier than that pizza will take to arrive at your doorstep.
Pizza Toasties
6 slices of bread - crusts trimmed
1/4 each of yellow, red and green bell peppers - cut into thin strips
1 small carrot - sliced thinly
1 spring onion - chopped
1/4 cup mushrooms
2 processed cheese cubes - grated
2 tbs cheese spread (I used a low fat one)
3 tbs tomato ketchup
Salt
Black pepper
Dried oregano
Toast the bread slices lightly in an oven at 150 degree Celsius for 4-5 minutes.
Once the slices are lightly toasted, remove from the oven. Spread the tomato ketchup and cheese spread on the slices. Top with mushrooms, onions, bell peppers & carrots.
Season with salt, pepper and oregano.
Finish with grated cheese on top - be as liberal or frugal as you want - its all up to your taste! I have been pretty careful with the cheese as you can see for yourself.
Bake in the oven at 170 degree Celsius for 8-10 minutes, till the cheese begins to melt.
Tuck in and enjoy - quick, easy and absolutely delectable!
