Dead and in-heaven!!!

Sunday evening, weekend almost drawing to a close and Monday morning blues looming large. The only thing that can comfort you is some dessert, but then all the added calories come to mind - what after the restraint of the weekend. No I am not giving in to the demons this time (again!)

Firm resolve to stick to only healthy eating. Does that mean I have to cross out all desserts from the "CAN EAT" list once and for all? Absolutely not, specially if you have a husband for company who has a massive sweet tooth.

That's quite a challenge - but as Barney Stinson (HIMYM fame - duh uh!) would say - CHALLENGE ACCEPTED  


Eggless sugarfree and made from granola and bananas, these muffins are actually good for you. Can you believe it???

In words of my beaming husband - I am one responsible wifey and in my own words - I am one responsible wifey (what did you think. Of course I am!)


Here is how you can make these no-guilt muffins.

Ingredients

2/3 cup flour
2 tbs honey
1/3 cup granola
2 tbs raisins 
30gm unsalted butter
1/2 tsp vanilla extract
2 ripe bananas (large)
1 tsp baking powder
1/2 tsp baking powder
1/2 tsp cinnamon
Pinch o'salt 

How to

Mash the bananas in a large bowl and keep aside.

Melt the butter, honey and vanilla extract on low flame. Once melted, keep aside to cool.

Sift together the flour, baking powder, baking soda, cinnamon and salt together a couple of times and reserve.

Mix the butter mixture into the bananas.

Now gently fold in the flour mixture into the bananas being careful not to over work.

Finally mix in the granola and raisins gently into the batter.

Pour into prepared muffin moulds and bake in a preheated oven at 190 degree Celsius for 20-25 mins till done.


Perfect for breakfast with a glass of warm milk :)
