Quick and Easy Mixed Vegetable Side

As a continuation to the last post on birthday cooking, here is the recipe of the super quick and easy mixed vegetable side dish that I made almost as an after thought. Its mildly spiced and very flavoursome - a perfect accompaniment to the spicy rajma curry I made. Creates a sort of balances in the meal.



I rummaged through my refrigerator and put together this side in practically fifteen minutes (minus the prep time - shelling peas took the longest)

Mixed Vegetable 

1/2 cup green peas- shelled
2 carrots cut lengthwise into four and sliced
1 cup cauliflower florets
1 tomato
1/2 tsp cumin 
2 cloves of garlic
1/2 tsp red chilli powder
1/4 tsp turmeric powder
Salt to taste
1 tbs oil
Coriander leaves to garnish

Heat the oil in a pan and add the cumin to it. Once the cumin begin to crackle, add the crushed garlic cloves to it. Saute for half a minute and add the chopped vegetables to it.

Next, add the turmeric, red chilli powder and salt. Mix well. Add a dash of water and cover and cook. 

Once the vegetables are half cooked add the tomatoes and again cover and cook.

Once the vegetables are cooked, remove from heat and garnish with coriander leaves.
