Much ado about...Dumplings

Dumplings !!!

How I crave good steamed dumplings or momos... whatever you call them. Piping hot served with the spicy and absolutely mouth watering sauce - for me they define heaven on a plate. 


The best ones I have had were in Kolkata. But they score a high mark more for the memories of me and my friends hogging on them in the evenings than anything else. Nothing beats the nostalgia some foods can incite.




Another dumpling destination for me is China Gate in Andheri West, Mumbai. I have braved the Mumbai traffic at peak hours just for the irresistible dumplings they serve - specially the delectable sauces they serve them with. 

I definitely recommend them to anyone and everyone who loves to eat good food - you will not be disappointed I promise.

Anyway, today I felt like making them in my own kitchen - something I have never done before. That's precisely the reason why I decided to try my hands at them and they turned out pretty fine! I don't think I will be eating the dumplings in restaurants anytime soon. Tasted great and without a drop of oil :) I am in no mood to waste all the toiling in the gym that I drag myself to do every morning. 



Vegetable Dumplings

For the dough:
1/2 cup flour
1/8 tsp baking powder
1/8 tsp salt

Filling:
1.5 cup chopped cabbage
1/2 cup chopped carrot
1/2 cup chopped capsicum
1/2 cup chopped onion
3-4 cloves of garlic - crushed
soy sauce
salt
black pepper
vinegar
1 tsp vegetable oil

Mix the flour, baking powder and salt and knead into a stiff dough. Keep aside.

Heat the oil in a pan. Saute the garlic and onion in it till translucent. Add the chopped vegetables, salt, pepper, vinegar and soy sauce to it. Saute till the mixture is dry. Set aside to cool.

Roll out the dough into thin circular dumpling wrappers (I prefer a very thin wrapper or the dumpling tastes too doughy to me) and spoon in teaspoon of the filling in the center. 

Hardest part...

Take a deep breath and TRY and wrap the dumplings as artistically as is possible for you. I spent quite some time on this actually - but in the end I think I managed to do a fair job. I wont disclose the time I spent at this 'art project' though!



Steam for ten minutes and you are all set to enjoy your own "handcrafted steamed dumplings" - totally worth the effort!
