Small Luxuries - Spanish Omelette

Had a very early start to the day. Hit the gym at 6:30 in the morning which I consider an achievement since I slept quite late and had decided to skip it for a day. Better sense prevailed and I finally did make it in time for the workout! 

Love the feeling when the day has an active start. I plan to squeeze in an hour of sleep sometime during the day. Not sure if I will be able to manage it though - does anybody else face issues trying to sleep during the day time?? or am I suffering with insomnia!

Anyway, considering I toiled it out in the gym, I deserved a bit of pampering. Which meant having a mini feast for breakfast - and not my regular bowl of oats. 

So while I sipped on my ginger tea (I absolutely love my morning cup of tea) I pondered over the ever so important question - what's for breakfast???



By the way ... the tea went cold while I fiddled around with the camera :(


Here's the thing - Even though I crave food that is high on taste, I absolutely cannot compromise on the health quotient. 

My sister is of the opinion that I have hit the nadir as far as using oil in cooking is concerned. Try as I may, I cannot do without the carbs - that's a luxury I can't deny myself. I believe one of the best things in life is to be able to eat good food. And delicious food can be healthy too!

So with the supplies I had lying around, I decided to treat myself to a Spanish Omelette !!!


Spanish Omelette

(1 portion)

2 eggs
1/2 a small onion
1 green chilly
1 clove of garlic
2 tbs chopped capsicum
1 small potato
2 tbs chopped coriander
Salt 
Black pepper
Tomato slices (optional)

Chop some onions, green capsicum, a clove of garlic, a small potato, a green chilly and some coriander. Fry the onions and garlic in some oil. Add the potato slices, capsicum and green chillies and cook till the vegetables begin to caramalize. I love the sweetness that the caramalization imparts. Season with salt and pepper.

Whisk two eggs and pour it over the vegetables. I lined some tomato slices on the bottom of the pan before pouring the eggs. This way when the omelette is ready I have beautiful red tomatoes on the top much like a pizza. 


Let it cook on low flame. Toss over and cook on the other side. It was a small portion, thereby easy to flip. Normally while cooking for the family I flip the pan over, covered with a plate and then slide the omelette back into the pan to cook on the other side. This way it does not break into pieces. I garnished with some fresh coriander as I am partial to the freshness it adds.

Needless to say I absolutely loved the hearty breakfast I had. Spanish omelette calls for a Spanish siesta!!!
