Pad Thai
The weekend began on a positive note and as promised I had my culinary adventures in the kitchen. Ended up making the Pad Thai that had been on my mind since a long long time !
Read up a lot of recipes but in the end went with my instincts as far as the sauce goes (which is the key to a good Pad Thai ). I don't claim to be an expert in Thai cuisine, but this particular recipe is something I can vouch for - having tasted it over and over again on innumerable occasions. 
2 cups flat rice noodles ( cooked as per the package instructions )
2 cup julienned mixed vegetables ( broccoli, cabbage, carrots, bell peppers)
1 medium onion sliced 
4-5 cloves finely chopped 
1/2 cup of bean sprouts 
2 tbs of roasted peanuts ( remove the chaff and crush lightly )
1 red chilli sliced 
1 tbs vegetable oil 
Sauce:
3 tbs tamarind paste
3 tbs sugar ( I used brown sugar. Jaggery would also taste good )
2 tbs dark soya sauce
Lime juice 
2 tbs sweet chilli sauce / pepper powder
1/2 cup of vegetable stock / water 
HOW TO 
Mix together all the ingredients for the sauce and keep aside.
In a wok, heat the oil on high flame. Sauté the garlic and onions till transparent. 
Next toss in all the vegetables and stir for a few minutes. 
Tip in the sauce into the pan and mix well.
Add the noodles and peanuts and adjust the seasoning as per your taste.
Sprinkle a few crushed peanuts on top before serving.
